INSTRUCTIONS
1.
Separate
the diced and sliced onions.
2.
Add
all of the beef patty ingredients except the onions to a large bowl.
3. In
a large skillet over medium-high heat, add 1 tbsp of butter once sizzling, add the sliced onions to one side of the pan
and the diced onions to the other side of the pan. Cook for 3 minutes or until
softened. Place the sliced onions in a bowl. Set to the side. Let the diced
onions cool. If your pan is not large enough to cook both diced and sliced
onions at the same time then cook the diced onions first until softened, about
3 minutes. Remove the diced onions and set to the side to cool. Add the
remaining tbsp of butter. Add the sliced onions and cook until softened. Set
the sliced onions to the side.
4. Add
the diced cooked cooled onions to the beef mixture and combine gently. Do not overwork the beef. Form the beef
mixture into patties. Add 1 tbsp of
butter to a skillet over medium-high heat. Sear each side of the beef patties
until browned. Remove and set aside. Leave about 1 tablespoon of the hamburger
fat in the skillet.
5. Mix
the beef broth and flour in a bowl to make a slurry. Mix until the clumps are
gone. Over medium- high heat. Add the slurry to the pan mix well. Cook until
boiling then simmer. Add the heavy whipping cream and the rest of the butter.
Mix well.
6.
Add
the beef patties and sliced onions. Simmer for 10-15 minutes or until the
patties are cooked through. You can put a lid on the skillet if you like but
don't cover the Salisbury steaks for too long because they may dry out. Add
salt and pepper to the gravy for taste and a small handful of chopped parsley.
Serve with string beans and mashed potatoes.
