LOW CARB BREAKFAST SANDWICH

and easy! This low carb breakfast sandwich is full of bacon, eggs, spicy mayo,
and cheese! It goes together fast and can be made ahead in batches and frozen.

INGREDIENTS

Recipe Low carb sandwich bread , cooled and cut in half
·
2
slices bacon
·
1
egg
·
1
slice cheese , smoked gouda or pepper jack are my favorites
·
1
tablespoon mayonnaise
·
1/2
teaspoon chipotle in adobo ,mashed to a paste
·
1
tablespoon cilantro , fresh - optional
INSTRUCTIONS
1.
Set
the bread aside.
2.
Mix
the mayo and chipotle - set aside.
3.
Cook
the bacon until it is crispy - cut each piece in half.
4.
Break
the egg into the bacon fat and break the
yolk.
5. Fry
until done - pushing the sides in to keep it approximately the same size as the
bread and flipping it once.
6.
Toast
the bread until lightly golden.
7.
spread
the mayonnaise mixture on one slice of the bread.
8.
Lay
the bacon across the other slice of bread.
9.
Place
the egg on top of the bacon.
10. Lay
the cheese across the top.
11. Microwave
until the cheese melts.
12.Carefully
put the cilantro on the melted cheese add the other piece of bread to the top.
13. Eat
while it's hot!
