KETO WRAPS WITH AVOCADO AND SHRIMP SALAD RECIPE
Egg
wraps without flour are like super-thin omelets and you can fill them with
anything. Here we made it keto with homemade mayo, avocado, shrimp and a little
touch of chili and cilantro.
Servings
: 2
INGREDIENTS
Shrimp salad
·
2
avocados
·
1
tsp lime juice
·
6
oz. shrimp, cooked and peeled
·
½
apple or a handful of radish
·
1
celery stalk
·
1
tsp sambal oelek or chili paste
·
½
cup mayonnaise
·
¼
cup fresh cilantro or fresh parsley
Wraps
·
4
eggs
·
1
oz. butter
·
salt
and pepper
INSTRUCTIONS
Wraps
1.
Whisk
the eggs with a pinch of salt and pepper.
2.
Bring
out a medium-sized frying pan and let butter melt slowly over medium low heat.
3.
Add
half of the batter and cook until the wrap has firmed up. Flip if you want, but
this is not really necessary. The wraps are not supposed to turn color, just
get firm.
4.
Repeat
with remaining batter.
Salad
1.
Split
and scoop out the avocado. Dice the avocado into ½-inch cubes and place in a
bowl, squeeze lime juice over them and stir.
2. Slice
the celery thinly and dice the apple or radishes finely. Add to the bowl with
the avocado.
3.
Add
mayonnaise, sambal oelek and finely chopped cilantro.
4.
Mix
well and stir in the cooked shrimp carefully. Salt and pepper to taste.
Tip
· This
shrimp salad can be enjoyed by itself or with leafy greens. Together with a
couple of boiled eggs it becomes an entire meal if you don't want to make the
wraps. Also works great with low-carb sesame crispbread, LessCarbs’ quick bread
and keto pancakes.
· Examples
of other things to fill the wraps with: Salami and brie cheese, tunafish salad
or vegetarian with your favorite vegetables and a generous amount of homemade
mayonnaise.
