SAVOURY MONKEY BREAD RECIPE
For
the perfect party starter, serve this delicious herbed bread with olive oil,
butter or your favourite dips. Perfect!

INGREDIENTS

cups (600g) plain flour

teaspoons salt
·

sachet (7g/2 tsp) dried yeast
·

teaspoon caster sugar

Coles Brand Australian Free Range Egg
·
1
1/2 cups (375ml) warm water
·
1/3
cup (80ml) olive oil
·
100g
butter, melted
·
2
garlic cloves, crushed
·
2
tablespoons toasted sesame seeds
·
2
tablespoons poppy seeds
·
2
tablespoons pistachio dukkah
·
1/4
cup (20g) parmesan, finely grated
·
1/4
cup (20g) natural flaked almonds
·
2
tablespoons chilli paste
·
2
tablespoons chives, finely chopped
·
2
tablespoons flat-leaf parsley, finely chopped
EQUIPMENT

25cm
(top measurement) ring or bundt pan
INSTRUCTIONS
1. Combine
the flour, salt, yeast and sugar in a large bowl. Add the egg, water and oil
and stir to combine. Turn onto a lightly floured surface and knead for 10 mins
or until dough is smooth and elastic. Place in a greased bowl. Loosely cover.
Set aside for 1 hour or until dough doubles in size.
2.
Preheat
oven to 180C. Grease a 25cm (top measurement) ring or bundt pan with a little
of the melted butter. Lightly dust with flour.
3.
Punch
down the dough. Turn onto a lightly floured surface and knead until smooth.
Divide dough into quarters. Cut 1 dough quarter into 16 small portions, then
roll into balls. Repeat with remaining dough quarters.
4.
Combine
remaining butter and garlic in a bowl. Place sesame seeds, poppy seeds, dukkah,
parmesan, almonds and chilli paste in separate bowls. Combine the chives and
parsley in a small bowl.
5.
Brush
1 dough ball evenly with garlic butter and roll in sesame seeds. Place in the
base of the prepared pan. Repeat with remaining dough balls, alternating with
poppy seeds, dukkah, parmesan, almonds, chilli, chive mixture and remaining
sesame seeds. Set aside for 15 mins to rise.
6.
Bake
for 30-40 mins or until golden brown and cooked through. Set aside in the pan
for 5 mins to cool before turning on a wire rack. Serve warm or at room
temperature.
